While BepInEx functioned, the moment I began adding plugins the game indeed crashed at startup. I have now confirmed that Sophos was the culprit. I re-installed Sophos, then used Total Uninstaller to be absolutely sure I was removing every possible trace of it. The game now functions with mods and plugins!
